The highest-class brewer's rice from Yamaguchi "Yamada Nishiki" is used for the ingredient and "The water of Benten pond", one of the 100 elections of Japanese brand-name spring water is used as mother water. Fourteen percent of the low alcohol content was realized by the additive-free method that is very difficult for sake. The pure scent and sweetness like a white peach characterize "Ohmine Junmai Daiginjo (brewed from the finest rice)" which was finished by all the processes of brewing by the craftsman's manual labor. Since it tastes so fruity and refreshing that you cannot realize it is made only from rice, it is preeminent also for affinity with sweets, such as vanilla ice cream.
