3億年もの長い年月をかけて形成された国定公園の「秋吉台」、その麓に湧き出るのは日本名水百選の称号を持つ「弁天池の水」、そして東洋一の鍾乳洞「秋芳洞」など、現代も大自然が色濃く残る山口県美祢市。その恵みを存分に生かし、大嶺酒造は江戸時代より蔵を構え、日本酒造りを行ってまいりました。 郷土の素材を使った酒を地元に卸す、“地産地消”の姿勢を貫いておりましたが、数々の不運が重なり製造休止の憂き目に遭いました。そんな苦難の道を歩みながらも、酒造りへの想いは断ち切ることなく蔵を保存しておりました。 そして2010年。「固定概念を覆す、国際的観点を織り交ぜた日本酒を造りたい」との想いを抱いた数人の有志が集結。年間5000ℓと少量ですが生産を再開させていただき、自然の恵みを生かした日本酒を完成させました。先人から受け継いだ技術など伝統は守りつつも、常識にとらわれることなく新たな発想を提案していきます。そして山口県美祢市から世界へ向けて「Ohmine」ブランドを発信いたします。

Mine in Yamaguchi Prefecture is a city which preserves much of its ancient natural beauty: the Akiyoshi Plateau, a quasi-national park formed over the course of 300 million years; at the foot of the Plateau, the spring of Benten Ike, known to be one of the 100 best water sources in Japan; and Akiyoshidou, the most impressive limestone cave in Asia. Making use of those blessings to their fullest extent, Ohmine Shuzou has ran its cellar and brewed sake since the 17's century. Despite our efforts to brew our sake under the motto of “chisan chisho,” meaning, produce and consume locally, we had no choice but to suspend production due to various misfortunes. But we continued to maintain our cellar, unable to sever our desires for sake brewing even during our troubles. And then, in 2010: A group of people harboring the hope to “brew a sake that overthrows conventions and weaves in an international perspective” gathered together. Although at a small-scale production level of 5,000 liters a year, we were able to perfect a sake that brings out the blessings of nature. While preserving the traditions inherited from our predecessors, we will aim to present cutting edge ideas without being bound by customs. And, from Mine City, Yamaguchi, we will transmit the “Ohmine” brand to the world.
